Swanny - Bartender
With nearly 18 years of experience managing and working in venues across London, Adelaide, and Sydney, I bring a deep love for hospitality and a passion for creating memorable drinking experiences. I’m a big believer in cocktails that are approachable, fun, and above all—delicious—I blend international experience with a down-to-earth style that keeps things welcoming, and never too serious.

Since joining the team at Huelo in early 2024, I’ve had the opportunity to deepen my knowledge of cocktails, wine and spirits. I’ve loved experimenting and crafting new cocktails for our seasonal menu and offering recommendations tailored to each guest. While I enjoy the creative side of bartending, what matters most to me is providing warm, attentive service. I aim to create a welcoming, easygoing atmosphere and bring care and consistency to everything I do behind the bar.
